Deep dark magenta with a glazed ruby hue. A rocky mousse fills the glass then subsides to reveal a lace of fine persistent bubbles. Intense and lifted aromatics of sarsaparilla, black pepper and brambleberries. Secondary notes of fresh bread, tanned leather and fermented meats from maturation in barrel and on lees in bottle. Fresh and vibrant. Intense dark fruit flavours bounce around the fruit tingle finish. The perfect accompaniment to celebrate Christmas.

Sparkling Shiraz is fantastic for food pairing. It pairs particularly well with rich and full flavoured dishes, such as glazed ham, roast lamb, pudding and dark chocolate. It is also an excellent match for harder to pair foods, like Peking duck or teriyaki salmon. Perfect with a wedge of vintage cheddar.
