Schnitzel Sandwich with Saucy Sister Chipotle Ketchup and Avocado Smash

  • 150ml Saucy Sister Chipotle Ketchup

  • 4 small chicken breasts

  • 2 Tbsp plain flour

  • 1 free range egg

  • ¾ cup breadcumbs

  • vegetable oil, to fry

  • 2 ripe avocados

  • 1 lime

  • ½ bunch coriander

  • 8 large fresh slices of vienna loaf

  • side of garden salad



Flatten chicken breasts using a meat mallet until about 1cm thick. Dust in flour, then dip in eggs, and finally in breadcrumbs. Fry on medium heat in a generous amount of vegetable oil until cooked through and golden on both sides. keep warm

Remove flesh from avocado and roughly smash using a fork. Zest the lime and add to avocado, then squeeze juice into the mix. chop coriander (roots, stems and all) and add to the avocado, mix thoroughly.

Place avo smash on base of bread, top with schnitzel, then a generous amount of saucy sister chipotle ketchup.

Serve with salad on the side.
